We’re seeking an Assistant Manager for a prestigious 3 Rosette-level restaurant in the Cotswolds. Working alongside the owner and General Manager, this is a purely floor-based role, leading by example to uphold the very highest standards of service, guest care, and attention to detail.

Benefits & Package:

• £33,000 basic salary
• £1,000 per month tronc (average) — realistic total package of £45,000
• 28 days holiday plus bank holidays

Responsibilities as Assistant Manager:

• Lead daily front-of-house operations, maintaining 3 Rosette service standards at all times.
• Deliver exceptional guest experiences — from warm, professional greetings to impeccable table service.
• Support and guide the front-of-house team in delivering consistency, accuracy, and finesse in every interaction.
• Confidently serve and open wine, ensuring correct presentation and etiquette.
• Provide wine recommendations and pairings to enhance the guest’s dining experience.
• Maintain detailed product knowledge across menu, wine list, and provenance.
• Manage reservations, coordinate with kitchen teams, and ensure seamless service flow.
• Uphold immaculate presentation standards across the restaurant at all times.
• Deputise for the General Manager when required.

About You:

• Proven experience in a fine dining or luxury hospitality environment — ideally 2 or 3 Rosette level.
• Exceptional service skills with natural confidence in guest interaction.
• A team player who leads by example with humility and passion.
• A genuine love for hospitality and guest experience.
