Where dining becomes something much bigger than food

As we move closer to the top of our World’s 50 Best Restaurants 2025 countdown, No.5 takes us somewhere completely different — not just a restaurant, but an experience that challenges what dining can be.

Welcome to Alchemist, Copenhagen.

Not just a meal — a journey

Alchemist doesn’t follow the usual rules of fine dining.

There are no traditional courses. Instead, guests are taken through around 50 “impressions”, spread across multiple “acts” in what becomes a seven-hour, multi-sensory experience.

From the moment you arrive — walking through heavy bronze doors into a theatrical space — it’s clear this isn’t about sitting down for dinner. It’s about stepping into a completely different world.

Dining takes place under a dome-shaped ceiling, where visuals, sound, and atmosphere shift throughout the experience. Food, art, storytelling, and environment all move together — constantly changing, constantly surprising.

The philosophy: Holistic Cuisine

At the heart of Alchemist is Chef Rasmus Munk, whose vision is centred around what he calls “Holistic Cuisine.”

Put simply, it’s an approach where food is just one part of a bigger message.

The restaurant blends:

  • Gastronomy
  • Art and performance
  • Social commentary
  • Science and sustainability

to create something that goes beyond taste.

As the restaurant puts it, the goal is to “push the borders” — using food as a medium to provoke thought, emotion, and conversation.

Some dishes are playful. Others are deliberately uncomfortable. But all are designed with intent.

A different kind of creativity

Yes, the food is exceptional — built on strong classical technique, serious research, and obsessive attention to ingredients.

But what makes Alchemist stand out is how that creativity is delivered.

Think:

  • “Space Bread” topped with caviar
  • Pigeon aged in beeswax
  • Dishes served in ways that challenge how we eat and think

Some presentations are designed purely to delight. Others are there to spark conversation around issues like sustainability, consumption, and food waste.

It’s bold, sometimes controversial — but never accidental.

A chef with a bigger purpose

What sets Alchemist apart even further is the intent behind it.

Rasmus Munk isn’t just building a restaurant — he’s using its global attention to support wider initiatives. Through the platform, he has contributed to projects focused on feeding the homeless in Copenhagen and supporting clean water initiatives in Africa.

It’s a reminder that hospitality can go beyond service — and actually drive change.

Why Alchemist matters

At No.5 in the world, Alchemist represents a very different direction for fine dining.

It challenges the idea that restaurants should only focus on:

  • Taste
  • Technique
  • Service

Instead, it asks a bigger question:
What if dining could make you think as much as it makes you feel?

Not every kitchen needs to operate at this level of theatre — but the mindset behind it is what stands out. Purpose. Creativity. Identity.

The bigger picture

As we continue our countdown, Alchemist sits firmly among the most innovative and thought‑provoking restaurants in the world.

Some restaurants refine the craft.
Some perfect consistency.

Alchemist does something else entirely — it reimagines what hospitality can be.

And that’s exactly why it belongs at No.5 in 2025.
