Marc’s career in hospitality began at 17, gaining hands-on experience in hotels and restaurants across Cardiff and the Welsh coast. His early years in the kitchen included an adventurous stint as a travelling chef with a European motorcycle racing team – a role that combined his love of food with life on the road.
Returning to Wales, Marc stepped into a Head Chef position within contract catering. Over time, he transitioned into front-of-house leadership, eventually becoming Head of Operations for the South, and later Account Director for a major national caterer. His background in both kitchen and client-facing roles gives him a rare dual perspective – one that balances operational rigour with a deep understanding of service expectations.
Marc believes that great food should always be matched by exceptional service – and that one is never an excuse for the other.
Outside of work, he enjoys walking the River Wye trails with his wife and three dogs, and is a regular at food markets, where his passion for locally sourced ingredients continues to grow.
