If you’re going to spend 5 days a week, and 10+ hours a day in a kitchen, then you NEED to be somewhere like this, producing classical dishes with modern notes and focusing on pioneering locally sourced, seasonal ingredients.
Confidence, ambition and passion are the key words here, and you will have worked at a similar level, probably 3aa Rosette or above.
