Creativity and attention to detail are key traits in this brigade, and everyone involved in the process from the production line to the deli counter to the fine dining restaurant work as one coherent unit.

The Fishmongers primary duties will be:

  • To oversee the smooth running of the fresh fish, cured fish and shellfish counters;
  • To prepare all the fresh fish for the counters, café, restaurant and delicatessen;
  • To prepare shellfish e.g. dressed crab, lobster, shucked oysters, etc.;
  • To carve cured fish for the fish bar;
  • To engage with the customers in a friendly and polite manner and offer advice on cooking suggestions;
  • To source suitable innovative products, maintain supplier relationships, and cost-effective ordering on the fish counters;
  • To maintain the gross profit margin;
  • To support the Head Chef in the preparation and delivery of culinary excellence of the menus for the delicatessen counters, café and restaurant;
  • To be involved with menu and recipe development;
  • To liaise with the Kitchen and Front of House staff to promote and ensure the smooth running of the fish counters;
  • To work in a responsible, safe and professional manner at all times;
